Preheat oven to 425°
Remove meat off of chicken carcass, leaving small bits attached to the bones
Put carcass, wings, skin, and some meat into a large stock pot
Add 8 cups of water to the pot
Add lemon, bay leaves, oregano, thyme, rosemary, salt (if using), peppercorns, apple cider vinegar, and salt to pot
Bring to a boil. While you wait...
Place onion, carrots, celery and garlic on a foiled lined baking sheet. Brush with olive oil and sprinkle with kosher salt and fresh ground pepper
Roast vegetables and garlic about 35-40 minutes or until there is a light char on them
While vegetables are roasting...
Once pot comes to a boil, begin skimming the foam, that has impurities, off of the top. This will take roughly 30 minutes
When vegetables & garlic are done, add th to the pot and continue to simmer for 2 hours, covered
Strain liquid through a large mesh strainer
The remaining fluid is your very flavorful & bright chicken broth. Try a tasty. Your soul will smile.
Discard all bones, etc
