Add olive oil to Dutch oven and turn heat to medium high
Add your mirepoix and sautée until onions are translucent.
Add garlic and allow it to cook until it blooms (30-60 seconds; where you can smell it. Don't cook it longer than that as garlic can turn bitter.)
Add wine to deglaze the pot
Add 8 cups of beef broth or stock
Add canned tomatoes
Add all seasonings unless you're using fresh. See that step below.
Bring to a boil and cook for 5 minutes
Add barley and cook around 15-20 minutes
Add green beans and corn
Cook for 10 minutes
Add fresh seasonings here, if using
Make sure barley is done (tender and chewy). If so continue to next step. If not, continue to cook until done, then proceed.
Turn off heat
Add spinach and stir
