Ingredients
Method
- In a large Dutch add 3 tbsp olive oil and allow to get hot

- Add onions, carrots, and celery and cook until onions are translucent

- Add 4 garlic cloves minced and allow to cook until it blooms (you can smell it)

- Add wine to Dutch oven to deglaze pot & allow it to cook out for 3-5 minutes (until you no longer smell the wine)
- Add 7-8 cups of broth to Dutch oven

- Add thyme, rosemary, turmeric, and ginger

- Add fish sauce, lemon juice, and bay leaves

- Bring to a boil
- Add 1 1/2 - 2 c brown rice

- Bring to a boil again, turn down to a medium simmer for 40 minutes

- Add shredded rotisserie chicken and cook for 5-10minutes

- Add spinach, parsley and basil

- Remove bay leaves & discard
- Add evaporated milk

- Try a bite
