Creamy Chicken, Herb, and Rice Soup

Ingredients
  

  • 3 tbsp Olive oil
Mirepoix
  • 1 Onion chopped
  • 4 Carrots peeled and diced
  • 3 Celery ribs chopped
Herbs & Seasonings
  • 1 tbsp dried thyme¹ | 3-5 sprigs fresh
  • 1 tbsp dried rosemary² | 2-3 sprigs fresh
  • 1 tbsp dried oregano³ | 3-4 sprigs fresh
  • 1 tsp ground turmeric⁴
  • 1 tsp ground ginger⁵
  • 1 tbsp fish sauce⁶
  • 2 bay leaves⁷
  • 1/2 lemon juice⁸
  • 1 tbsp dried parsley⁹ | 1/4 c fresh
  • 1 tbsp dried basil¹⁰ | 1/2 c fresh chopped/julienned
Liquids
  • 1/2 cup White wine
  • 7-8 cups Homemade Roasted Rotisserie Chicken Broth (see recipe link below)
Misc.
  • 2 Cups rotisserie chicken (you can use fhe meat and the bones to make this soup, saving you money) Diced or Shredded
  • 1 1/2 cups Brown rice
  • 2 tsp Kosher salt
  • 1 tsp Fresh ground pepper
  • 1 cup evaporated milk
  • 1 cup loosely packed spinach

Method
 

  1. In a large Dutch add 3 tbsp olive oil and allow to get hot
  2. Add onions, carrots, and celery and cook until onions are translucent
  3. Add 4 garlic cloves minced and allow to cook until it blooms (you can smell it)
  4. Add wine to Dutch oven to deglaze pot & allow it to cook out for 3-5 minutes (until you no longer smell the wine)
  5. Add 7-8 cups of broth to Dutch oven
  6. Add thyme, rosemary, turmeric, and ginger
  7. Add fish sauce, lemon juice, and bay leaves
  8. Bring to a boil
  9. Add 1 1/2 – 2 c brown rice
  10. Bring to a boil again, turn down to a medium simmer for 40 minutes
  11. Add shredded rotisserie chicken and cook for 5-10minutes
  12. Add spinach, parsley and basil
  13. Remove bay leaves & discard
  14. Add evaporated milk
  15. Try a bite
