Easy Homemade Roasted Rotisserie Chicken Broth

An easy, but super tasty chicken broth that is packed full of herbalicious decadence that will warm even the coldest of hearts.

Ingredients
  

  • 1 Whole rotisserie chicken (Costco is a favorite)
  • 1 Onion chopped
  • 2 Carrots peeled & cut into 3-4" pieces
  • 2 Celery ribs cut into 3-4" pieces
  • 4-6 Garlic minced
  • 1 Lemon sliced
  • 2 Bay leaves
  • 4 Oregano sprigs
  • 5 Thyme sprigs
  • 2 Rosemary sprigs
  • 10 Whole peppercorns
  • 8 Cups Water
  • 1/8 Cup Apple cider vinegar
  • 2-3 tbsp Kosher salt (If using)

Method
 

  1. Preheat oven to 425°
  2. Remove meat off of chicken carcass, leaving small bits attached to the bones
  3. Put carcass, wings, skin, and some meat into a large stock pot
  4. Add 8 cups of water to the pot
  5. Add lemon, bay leaves, oregano, thyme, rosemary, salt (if using), peppercorns, apple cider vinegar, and salt to pot
  6. Bring to a boil. While you wait…
  7. Place onion, carrots, celery and garlic on a foiled lined baking sheet. Brush with olive oil and sprinkle with kosher salt and fresh ground pepper
  8. Roast vegetables and garlic about 35-40 minutes or until there is a light char on them
  9. While vegetables are roasting…
  10. Once pot comes to a boil, begin skimming the foam, that has impurities, off of the top. This will take roughly 30 minutes
  11. When vegetables & garlic are done, add th to the pot and continue to simmer for 2 hours, covered
  12. Strain liquid through a large mesh strainer
  13. The remaining fluid is your very flavorful & bright chicken broth. Try a tasty. Your soul will smile.
  14. Discard all bones, etc
